Ingredients
- 1 large butternut squash (4-5 lbs.), peeled and cut into large chunks
- 1 large apple, peeled, cored and quartered
- 1 large onion, chopped
- curry powder
- salt
- vegetable oil
- butter (optional)
Preparation
- Sauté the onion in oil (and butter, if using butter) with curry powder and salt. Once onion is cooked (translucent), add the apple and continue to sauté for a few moments.
- Add the squash pieces and cover with water.
- Simmer over medium heat (a very slow boil) until the squash is soft.
- Remove the squash, apple and onion with a slotted spoon (leave the water in the pot), and purée them in a food processor.
- Return puréed mixture to pot and stir to a consistent texture. If necessary, cook further (to thicken) or add water (to thin).
- Add salt and curry powder to taste.
Serves 4.
